Giuseppe Giusti is the oldest producer of balsamic vinegar in the world. Founded in 1605, seventeen generations of vinegar makers have produced some of the finest balsamics on the planet. Whitmore & White are one of the few importers of Giusti Balsamic Vinegar into the UK, and we believe Giusti to produce some of the most outstanding balsamic vinegar available. This black gold of Modena was once so highly prized as to have been passed down in wills and presented as dowry for brides in aristocratic circles. It was believed to have medicinal qualities for all manner of ailments and was a great source of wealth for its producers. Today, Giusti is one of the most awarded and highly regarded producers of balsamic vinegar around the world. It's popularity here in the UK has grown significantly in recent years, and it is certainly in demand here at Whitmore & White! Aceto Balsamico di Modena IGP Only two areas produce traditional balsamic vinegar, Modena and neighboring Reggio Emilia. True balsamic vinegar is made from a reduction of pressed Trebbiano and Lambrusco grapes. The resulting thick syrup, or mosto cotto, is aged for at least twelve years in barrels made of oak, chestnut or ash. True balsamic vinegar is rich, glossy, deep brown in color, and has a complex flavour that balances the natural sweet and sour elements of the cooked grape juice with hints of wood from the casks. Here at Whitmore & White we usually stock all three types of balsamic, although Giusti remains the most accessible in terms of quality and value for money - the most expensive balsamic vinegars can sell for over £1,000 a litre! We're glad to say these aren't quite that expensive!
