Our new Gazpacho is from Cordoba in Andalucía, southern Spain. It is traditionally made from a mixture of organically grown vegetables: puréed tomatoes, cucumber, bell peppers, garlic, sherry vinegar and olive oil. This simple, light no-cook chilled soup contains all the intense flavours, aromas, and colours of the season's best products.
It contains all the main ingredients of a Mediterranean diet and thus is healthy and can be drunk like juice. This makes it perfect as a tapa before lunch or dinner. This Gazpacho, tomato & pepper soup is completely vegan.
Serve the soup traditionally by sprinkling with small cubes of serrano ham. Or if you prefer, finely chopped cubes of cucumber and tomato work very well instead. Or for a gourmet treat, add a few chilli olive oil pearls from our Caviaroli range!
