Winemaking Process:

Harvested in March 2023 from the La Flor Vineyard in Maipú, Mendoza, this 100% Malbec wine embodies a meticulous winemaking process. The grapes are hand-harvested, ensuring the selection of only the finest fruit. Two days before the total grape collection, a Pie de Cuba is created using 200 kg of organic Malbec grapes and their indigenous yeasts, establishing a vibrant starter for fermentation. Once an optimal cell count is achieved, the remaining grapes are inoculated, initiating fermentation. This process involves periodic pumping over and an extended total maceration period of 15 days with the must, allowing for the extraction of rich flavors. Following this, the liquid is separated from the solids, and the juice is pressed. The wine is then bottled without filtering, preserving its authenticity. Notably, no sulphites are added during the winemaking process, showcasing a commitment to minimal intervention.
