A rich and indulgent mayonnaise made using oak-smoked olive oil from Toledo. This oil is naturally smoked over the fires that are used to dry the peppers which make Piment_n de la Vera. Delicious when used to make a chicken mayonnaise, or for a moist and flavoursome poached salmon sandwich. Otherwise just use as you would any other mayonnaise to add a lovely, smoky depth of flavour.
