Vineyard: From a single vineyard planted at around 480m above sea level (0.3ha) with double
Guyot trained vines (very low yield), cultivated in full respect of nature. The vineyard is located
near the little town of Vita in the province of Trapani.
Winemaking: Fermented in stainless steel with native yeast at controlled temperature. Around
10% whole bunches were used in the fermentation. 50%of the wine aged for one year in French
oak barrique with a small percentage of new oak, the rest is aged in stainless steel. The wine was
bottled unfi ned and unfi ltered with low sulphites.
This is the 4th offi cial vintage of the Zito family adventure however this vintage was slightly
diff erent as it was a Late Harvest cuvée. In 2021, the grapes experienced a very hot vintage and
so we left them to become naturally shrivelled on the vine (appassimento). This led to more
concentrated fruit aromas and sugars (hence the higher ABV).
