TASTING NOTE

Pale yellow with olive green and golden reflections. Powerfully aromatic with a distinctive flor character, intensified by the unrefined nature of the Fino. Aromas of fresh bread and hints of almond are accompanied by savoury flavours and a long, clean citrus finish.

Fino En Rama is unfiltered, unclarified Tio Pepe taken from the middle of the cask during spring when the flor growth is at its thickest. Made in strictly limited quantities, Tio Pepe Fino En Rama is the freshest fino you can drink. ‘En rama’ is the local jargon used by winery workers to refer to wine in its unrefined and most delicate state, prior to the normal stabilization, clarification and filtering processes that fino sherry, like many white wines, have to go through prior to bottling.

The 2013 release of Tio Pepe Fino En Rama is a selection from the best barrels from two of the ancient Tio Pepe soleras: Constancia and Rebollo. Both these soleras rest in the historic Gonzalez Byass bodegas where Tio Pepe carries out its biological ageing. Tio Pepe Rebollo is the founding solera, formed of 87 barrels while the larger solera of Tio Pepe Constancia is made up of 356 barrels. Both soleras bring unique elements to this release of Tio Pepe Fino En Rama.

2013 marks the fourth release of Tio Pepe Fino En Rama. As with previous years, the label is based on original art work discovered in Tio Pepe’s historical archives, while the production method is inspired by the days when Fino was enjoyed straight from the cask. En Rama expresses the unique character of sherry: the intoxicating smells of the bodegas and the intensity of the living veil of yeast ‘flor’ which covers the wine and is the essence of this delicate fino.

ABOUT THE PRODUCER

In 1835, infected by the sherry boom of his time, Manuel María González purchased an Andalusian bodega in Jerez. Initially a trading house, he started to explore the production of wine, and began planting his own vines in 1844. In 1849 he created his own brand Tio Pepe, the first registered trade mark in Spain. Today Tio Pepe is distributed to more than 150 countries around the world as one of the best-selling Finos in the world. In 1855 González associated with his British trade representative Robert Blake Byass. This was the foundation for today’s largest sherry producer Gonzalez Byass. Today the firm owns about 650 hectares of prime sherry vineyard, many of which are in the Jerez Superior area, and extensive vine nurseries.
